Instructions

  1. Prepare the Peppers:
    • Wash the red bell peppers and remove the seeds and membranes.

  2. Cook the Jelly Base:
    • In a large pot, combine the pureed peppers, apple cider vinegar, sugar, and red pepper flakes.
    • Stir well and bring the mixture to a boil over medium-high heat.
    • Reduce the heat and simmer for about 10 minutes, stirring occasionally.
  3. Add Pectin:
    • Stir in the liquid pectin (or powdered pectin as per instructions).

  4. Test for Setting Point:
    • Remove from heat and let the jelly sit for a minute.

  5. Jar the Jelly:
    • Pour the hot jelly into sterilized jars, leaving about 1/4 inch of headspace at the top.
    • Wipe the rims clean and seal with sterilized lids.
  6. Process the Jars:
    • Place the jars in a boiling water bath for about 10 minutes to ensure a proper seal.
    • Carefully remove and let them cool at room temperature.
  7. Store:
    • Once cooled, check that the jars are sealed (the lids should not flex when pressed).
    • Store in a cool, dark place for up to a year. Refrigerate after opening.
